Red fruit salad with black olives, chocolate and churros

A 1000% original dessert with red fruits and black olives! And greedy with churros and chocolate.


For 4/6 people:

  • 300 g black olives candied in syrup
  • 5 ml of olive oil
  • 1 tray of blueberries
  • 1 tray of blackberries
  • 1 bottle of currants
  • 50 g of 75% chocolate
  • 30 g of liquid cream
  • 20 g of milk

For churros:

  • 1 glass of flour
  • 1 glass of water
  • A pinch of salt
  • 50 g caster sugar


Prepare the churros:

Put the fryer to heat at 180 ° C or heat oil in a saucepan

Boil the water with a pinch of salt.

Put the glass of flour in a bowl, pour the boiling water over and mix.

Put the dough in a pastry bag and drop the churros in the fryer or saucepan and brown for 1 to 2 minutes, remove the oil and enjoy with the preparation below.

Prepare the fruits:

Mix the black olives, currants, blueberries, blackberries and minced coriander.

Boil the milk and cream together then pour the mixture over the chocolate and add a drizzle of olive oil. Mix with a whisk until you have a thick and even mixture and let cool

In verrines, arrange a chocolate ganache base and cover with a mixture of olives

Decorate with small coriander leaves and enjoy with the churros
