  • For 6 to 8 people :
  • 1 liter of custard ready.
  • For the snow: 6 egg whites
  • 2 tbsp. tablespoon icing sugar.
  • For the grout:
  • 500 g strawberries
  • 5 c. tablespoon icing sugar
  • 2 tbsp. of strawberry liqueur.


Beat the egg whites until stiff. As soon as they start to take, incorporate the icing sugar. Wear a pot of water with a shudder. Take egg dumplings in snow with a tablespoon. Put them on the water as they go, let them cook 1 minute on one side, 30 seconds on the other and drain them on a clean cloth. Wash, cut the strawberries and mix them in a fluid coulis with the liqueur and icing sugar. Place all items in the refrigerator. At the last moment, dissolve three quarters of the coulis in custard. Sprinkle with egg whites, drizzle with the remaining coulis and serve.
